Taurine, chemically known as 2-aminoethanesulfonic acid, is an organic compound with the formula C₂H₇NO₃S. It is used widely in pharmaceuticals, food additives, fluorescent whitening agents, and organic synthesis, as well as a biochemical reagent, wetting agent, and pH buffer.

Taurine is a sulfur-containing amino acid that, while not a protein component, is found throughout various tissues and organs in the body. It was first discovered in ox bile, hence the name, and has long been considered a non-functional metabolic byproduct of sulfur-containing amino acids. Taurine is found in high concentrations in the brain, heart, liver, kidneys, ovaries, uterus, skeletal muscles, blood, saliva, and milk, with the highest levels in the pineal gland, retina, pituitary gland, and adrenal glands. In mammalian hearts, free taurine makes up 50% of the total free amino acids.
